Boats leave every twenty minutes from a dozen jetties and they do not sell out. Buy it the morning of, or an hour before, and pick the departure time by the light.

Either, and the choice is really between boat types, not between tour and no tour. The big glass-roofed boats are cheap, frequent and slightly soulless. The small open boats hold twelve people, cost twice as much, and go down the narrow canals the large ones cannot enter. If you are only doing one, do the small one at dusk. Skip the hop-on-hop-off pass unless you are seriously using it as transport.
